Now a few Irish recipes to celebrate
this special day of our Irish Community:
Beef with Guinness 1/4 lb butter, 1 lb. Beef chuck
cut into 1x2 inch pieces.
1 large sweet onion-sliced thin , a bouquet
garni; thyme,
sage, parsley, bay leaf, 1/4 tbsp. black pepper, 1 cup beef stock,
1 pint of Guinness stout,
4 medium potatoes(peeled) 2 tbsp. parsley,
large manly sweet carrots.
Instructions:
Heat butter in heavy skillet, brown the beef in batches- set beef
aside.
Cook onions in hot fat for 3 min.- just light browned, return
the meat to pan, sprinkle
with some flour to thiken,add the bouquet garni, salt, pepper, stock & stout
and bring to a boil, turn down to simmer . Place saucepan uncovered into the
preheated oven (350 o F) for about one hour. Now add the potatoes and continue
for another 40 min .till all is tender. Adjust salt & pepper to taste. Remove
the bouquet garni & garnish with fresh parsley & fresh thyme. You must
serve this wonderful stew with a good Irish beer.
Irish Strawberry Scones: 1cup strawberries, 2
1/2 cups of all purpose flour,
3 tbsp. sugar, 2 tsp. Baking powder,
1/4 tsp. Salt, 6 tbsp. butter, 2/3 cup milk.
Instructions:
Pre-heat your oven to 400 o F. Wash & cut strawberries into
1/2 inch sections-set aside. In a large bowl mix together the flour,
sugar, baking powder, & salt.
Add butter, with a pastry blender or 2 knives cut in the butter until mixture
resembles course crumbs. Stir in strawberries, toss well to coat.
Now add the
milk all at once.
With a fork lightly toss together until mixture holds together. With floured
hands gently form in a ball. On a floured board, using a rolling pin, roll out
the dough 1/2 inch thick. Cut dough into app. 2 1/2 inch crested circles.
Place on greased or silicon paper cookie sheet and bake for app. 10- 12 min.
Serve warm with whipping cream, more fresh strawberries and the best Irish Tea.
