Irish Recipe "Soda Bread"

 

By popular demand and a lot of pressure Chef Georg will publish his famous Irish “Soda Bread”


Graham flour is courser than regular whole wheat flour, which also works. If you use the latter,
substitute one -half cup wheat bran or germ for one cup all purpose flour.


3 cups all purpose flour -plus more for dusting
1 cup graham flour
2 tsp. coarse salt (kosher)
1 tsp. baking soda
1 tsp baking powder
4 tbsp cold butter cut into small pieces
1 2/3 cups buttermilk


Mixing Method:
1. Preheat oven to 350oF, line a baking sheet with parchment paper.
2. Blend together all dry ingredients. Add the butter and now add the buttermilk.
3. Knead the dough until well developed, don’t over mix !
4. Let rest for 10 min. than shape to a nice round loaf.
5. Place on baking sheet, cut some decoration on the top, sprinkle with flour and start baking.
6. Baking time is app. I hr. 20 min. after 30 min. cover the top with a sheet of parchment paper and turn oven to 325oF.


All you need now is the Irish Stew and a good beer, enjoy!
