Graham flour is courser than regular whole wheat flour, which also
works. If you use the latter,
substitute one -half cup wheat bran or germ for one cup all purpose
flour.
3 cups all purpose flour -plus more for dusting
1 cup graham flour
2 tsp. coarse salt (kosher)
1 tsp. baking soda
1 tsp baking powder
4 tbsp cold butter cut into small pieces
1 2/3 cups buttermilk
Mixing Method:
1. Preheat oven to 350oF, line a baking sheet with parchment
paper.
2. Blend together all dry ingredients. Add the butter and now
add the buttermilk.
3. Knead the dough until well developed, don’t over mix !
4. Let rest for 10 min. than shape to a nice round loaf.
5. Place on baking sheet, cut some decoration on the top, sprinkle
with flour
and start baking.
6. Baking time is app. I hr. 20 min. after 30 min. cover the top with a sheet
of parchment paper and turn oven to 325oF.
All you need now is the Irish Stew and a good beer, enjoy!
Bon Appetite, yours,
Chef Georg.
